Cheese Topped Potatoes 2 ea Baking potatoes, scrubbed and dried
1/3 c Plain nonfat yogurt
2 1/2 tb Cooked and diced broccoli
1 tb Shredded cheddar cheese
1/8 ts Pepper
Using fork, pierce each potatoes several times. Place double thickness of microwave safe paper toweling on bottom of microwave oven. Place potatoes 1 inch apart on paper toweling. microwave on high 7-10 minutes turning over halfway through cooking, until just tender when pierced with knife. Wrap each potatoe carefully in paper toweling and let stand 5-10 mintues until tender. While potatoes are standing, in bowl combine yogurt, broccoli, cheese and pepper until blended.
